The UN Food and Agriculture Organization has identified livestock agriculture as the major culprit in global warming. Raising and consuming animals for the dinner table generates more greenhouse gases than cars, trains, planes and all other sources of transportation combined. Producing a single pound of beef requires 2000 gallons of water. As a committed vegan, I encourage others to reduce their carbon and water footprints at every meal by eliminating meat and dairy from their diets. This is the more important step we can take as individuals to preserve a habitable earth for our children and the millions of other species who call this planet home.
